Mama bakes tremendously mouth-watering pineapple tarts. Her homemade pineapple tarts' pastries are fine, smell nice buttery and peculiarly, dry. They are small, bite-size pastries and are not at all greasy nor crunchy or cake-like. These qualities are the perfect match for the moist, sweet tarts fillings which is made from grated fresh pineapple that has been blended and slowly cooked down with sugar until it is caramelized, lovely golden colored and firm enough to be rolled into little balls.
When you bite into a pineapple tart, the pastry instantaneously begins to disintegrate into a rich butter crumble that perfectly balances the sweetness of the dense, almost chewy pineapple filling.
Considered a “festive cookie”, pineapple tarts are usually consumed during the Chinese New Year season. However, they are sold all year round due to their high demands and good taste.
